Ingredients
Ingredients for 4 people: 1kg white beans 1 tomato 1 green pepper 1 onion 1 clove of garlic 1 teaspoon of paprika 1 bay leaf 1dl of olive oil salt
-
Preparation
Put the freshly shelled beans into a casserole dish, covered with cold water and with a bay leaf. Allow to cook on a low heat for about forty-five minutes until they are soft. There are two ways of preparing them. One is by adding the onion, cut into slices, the chopped green pepper and tomato and the whole cloves of garlic just after they come to the boil. In this case, add the paprika and raw oil a little after they finish cooking. The second method is to fry the chopped onion, garlic and pepper, the chopped tomato the paprika and bay leaf in the olive oil. Add this half way through cooking in order to cook everything together. In both cases, salt them five minutes after taking the stew off the heat so they do not become hard.

In any case, always serve them very hot. Note: If you want a more filling dish you can add a quail or two lamb chops or a piece of chorizo or streaky bacon for each diner.
