Ingredients for 4 people: 400g of Teruel cured ham slices 1kg of ripe tomatoes 250g of red peppers 2 cloves of garlic olive oil 1 bunch of parsley 1 teaspoon of sugar salt

Preparation
Fry the slices of ham in olive oil with the chopped garlic. When they are fried but not burned remove from the heat and put aside, without the garlic. Add more oil and cook the peeled and chopped tomatoes in it. Leave on a low heat while you reduce it, stirring with a slotted spoon, until you get a thick tomato sauce, to which you must add a teaspoon of sugar to reduce the acidity of the tomato. Leave the sauce to cool and add half a small glass of water. Correct the level of salt. Put the slices of ham in a casserole dish with the tomato sauce on top and cook them for ten minutes. Meanwhile, cook the red peppers cut into strips.
