Ingredients for 4 people: 1kg of hake or anglerfish the yolk of 1 hard-boiled egg ½ a lemon 1 large onion 2 cloves of garlic 1dl of tomato sauce 1dl of fish stock 1dl of cider olive oil flour parsley salt

Preparation
Prepare four steaks of hake or anglerfish by cutting the loin into four pieces. Put on the lemon juice and allow to marinate for a few minutes. Then dry, season and flour the pieces of fish. Fry them in a frying pan with olive oil on both sides, turning them over, and put aside. Lightly fry the garlic and chopped onion and add the tomato sauce. Mash up the hard egg yolk with some parsley leaves and a little cider in a mortar. add this into the fried vegetables, together with the fish stock and the rest of the cider. Put the fish into casserole dish with the sauce. Leave on a low heat for a quarter of an hour, moving the dish from time to time so it does not stick.
