Calahorra artichokes in their own sauce

Ingredients
Ingredients for 6 people: 3 dozen artichokes 300g of cured ham 1 spoonful of flour 4 cloves of garlic 1 onion oil salt

Preparation
Clean the artichokes and remove the harder leaves until the light green ones appear. Cut off the upper part and then cut them down the middle. Put them into a container with cold water, a little dissolved flour and a few drops of lemon juice. Put a pan on the heat containing plenty of water, a little salt and 2 spoonfuls of oil. When it begins to boil, gradually add the artichokes without stopping it boiling. Let them cook until they are ready and put them into a shallow casserole. You must also keep back a little cooking water to make the sauce. Chop the onion and garlic and cook it all in a frying pan with a little oil. Cut the ham into chunks to add it before the onion and garlic change colour. Then put in a spoonful of flour and let it cook a little. Add a little of the cooking stock and check the level of salt. Stir everything with a wooden spoon until you get a light sauce. Pour it all over the artichokes and let them cook for about 8 minutes, over a low heat.
