Ingredients
Ingredients for 4 people: 150g of flour 1/4 cup of water 1/4 cup of milk 25g of butter 2 eggs 1 teaspoon of grated lemon rind 1/2 cup of oil 3 spoonfuls of icing sugar salt

Preparation
Put the water, milk, a pinch of salt and the butter in a pan on the heat. When it begins to boil, add the flour in one go. Work strongly with a wooden spoon or spatula until you get a mixture which comes away from the pan. Remove from the heat and add the lemon rind and the eggs, one by one, mixing well. Heat plenty of oil in a frying pan and form small balls with the help of 2 teaspoons. Fry them in oil that is not too hot until they are golden and have expanded. Dry on absorbent paper and fill them to your taste. You can do this with bakers' custard, chocolate cream, candied pumpkin etc..

Dust with icing sugar and serve them immediately.
