Ingredients: 4 eggs 100 gm of sugar 1 spoonful of liquor 150 gm of starch flour grated lemon rind

Preparation
Break the eggs into a bowl and mix with the sugar, liquor and grated lemon rind, until the mixture turns white. Next, add the starch flour by spoonfuls and blend until the flour is completely mixed in. Grease a sponge tin and place the mixture in it. Put the tin in a pre-heated oven and bake for 25 to 20 minutes, until the 'bollo' is cooked and golden.
